Network protocol is an agreed set of rules for the format, order and meaning of the messages that devices exchange, so that different systems can communicate. Application-layer protocols such as HTTP, SSH, SMTP, NTP and SNMP each define these rules for one kind of service.

In simple terms: A protocol is a shared language with fixed rules. Because both sides follow the same rules, a browser and a web server made by different companies still understand each other.
